I'm having a chilled slice for my late lunch as I write this (pretty good chilled too). The Guardian has been featuring recipes from his latest book, which are all veggie recipes, but he doesn't exclusively cook veggie. I've tried many of his recipes (veggie and non-veggie), never disappoint!
My only deviation from this recipe was the 100g olive oil. Cooked the onions in a non-stick pan, so only needed about half that amount. Enjoy!
